Question

What happens if I do not submit discovery to plaintiff within 30 days. This is an unlimited civil case.

Answer

Face sanctions that can go as far as dismissing the claim or rendering the judgment against you read CCP section 2023.030

Answer

In addition to what was anyway said, you also waive all objections, including those based on privileges.

Answer

Objections are waived, including any really good ones. The party that served the discovery can file a motion to compel at any time, which initially will result in an order that you answer the discovery, and possibly monetary sanctions. Subsequent refusals to respond to the discovery can include more severe sanctions, such as issue sanctions, or terminating sanctions, in which your case is dismissed, or your answer is stricken and your default is entered.
